Biwa trout dishes
Biwa trout which inhabit only Lake Biwa live mainly in the deep waters of the North Side of Lake Biwa. The taste of Biwa trout called “the treasure of Lake Biwa” is evaluated more highly than that of fatty tuna because it has no peculiar flavor and has large amounts of fat with refined sweetness. Its various preparation methods such as serving raw and freshly sliced, broiled with salt, boiled with soy sauce, boiled in miso, fried in tempura, etc. are all very popular.
